It inhabits natural and man-made reefs and outcroppings, and pretty well eat all of the time (mainly squid, other fish and crusteaceans). A variety of amberjack (Japanese amberjack or yellowtail) is quite valuable in Japan for use in sushi, which is what we suspect is why the question was asked.
Amberjack is a white meat with a firm texture, with a mild taste. You can successfully substitute mahi-mahi, mullet, tilefish, grouper and shark. Although, from our experience, shark is more than a mild taste.
