Our Comments:

Here's a cut-and-paste that we lifted out of a commercial site: "This is a small black, kidney-shaped bean with a particularly rich and full flavor. It's a favorite in southern Mexico, South America and the Caribbean's. Great with rice and meat, particularly good in soups and casseroles. Also known as Turtle Soup Beans, Mexican Blacks and Frijoles Negros."

We also came across a reference (that currently eludes us at this time) that an acceptable substitute is the plain, old black bean.

We have a specific category for Black Bean Recipes on our Just Bean Recipes site.
